Quinoa salad with corn and coconut oil and lemon

1 cup cooked Quinoa
1/2 sweet corn
3 tablespoons coconut oil
3 tablespoons lime juice
1 teaspoon lime zest
1 chopped onion
2 tablespoons butter
1 teaspoon honey
Salt and pepper to taste

In a bowl mix the lemon juice and zest.
For the vinaigrette: in a skillet melt the butter, add the honey, salt, pepper and the lime zest.
In a bowl, stir the cooked Quinoa, the corn and the onion, then bath with the vinaigrette you previously prepared. Let stand and serve.
