Quinoa, cucumber and parsley salad

Ingredients

1 cup cooked Quinoa
1/2 cup chopped onion
3 tablespoons vinegar
1 tablespoon pepper (not spicy)
1 chopped cucumber
1 tablespoon olive oil
1 tablespoon chopped parsley
Salt and pepper to taste

Directions
Stir all ingredients in a bowl, let stand 5 minutes to blend flavors and serve immediately.
